Ingredients

  1. 2 ozDried ancho chiles
  2. 7 ozCan chipotle pepper in adobo sauce
  3. 1 tspBlack pepper
  4. 2 tspCumin powder
  5. 2 tbspFresh oregano, chopped
  6. 6 cloveGarlic
  7. 2 tspSalt
  8. 1Red onion, quartered
  9. 1/4 cupOil (canola/vegetable/olive)
  10. 3 lbBoneless, skinless chicken

Steps

  1. 1

    Soak dry chilies overnight in water, until soft. Remove seeds.

  2. 2

    Add chilies and rest of the ingredients in blender or food processed. Purée until smooth.

  3. 3

    Stab chicken with a fork to let the marinade soak in. If you're marinating overnight, you won't need to stab it too much. If you're marinating for an hour, stab all over!

  4. 4

    Spread marinade over chicken, refrigerate for one hour or up to overnight.

  5. 5

    After marinating, grill on medium high on an indoor grill where the chicken can be pressed flat.

  6. 6

    If using a skillet, heat oil to medium high. Place a foil-wrapped brick on top of chicken to press it flat.

  7. 7

    If using outdoor grill, use charcoal to make it ultra delicious. Place foil wrapped bricks to press chicken flat.

  8. 8

    You can also make this on a panini grill on medium high heat. Place something heavy on top to weigh it down.
