Grease a large loaf pan 14.5cm x ( 9cm deep). Linebase andlong sides with bsking paper, extending paper 4cm aove pan edges.

Comine butter and water in a large saucepan over low heat. Stir until melted. Add dates. Bring to a boil. Remove from heat. Stir in soda. Transfer to a large bowl. Stand at room temperature to cool slightly.

Add sugar, apples, walnuts, flour and eggs to cooled date mixture. Stir until combined. Pour into prepared pan.

Cook in moderatelybslow oven (160ºc) for about 1 hour, 20 minutes, or until golden brown and a skewer inserted into the centre comes out clean. Stand loaf in pan 10 minutes. Turn out onto a wire rack to cool.

Serve warm or cold. Cut into slices with butter.
