Cook potatoes, drain and let cool.

Dough. Add butter and salt to the flour and rub together well. Add water and mix until you have a soft dough. Knead until the dough feels soft and velvety. Divide the dough into 9 balls. Roll each ball into a 4" circle and cut in two. Set aside.

Filling. Dice potatoes set aside. Heat oil in skillet. Cook ground chicken or beef. Add onions chillies and spices. Fry until onions are soft. Add potatoes and stir and cook until all is mixed thoroughly. Remove from heat and add cilantro.

To fill samosas, moisten the straight edge of the dough with a little warm water, add filling, fold in half to make a triangular cone and press the edges together firmly.

Fry samosas in oil until golden brown.
