Heat oil on a medium flame with the bay leaf, cloves, cinnamon and cardamom pods for a couple of minutes.

Lower the heat a bit. Add onions and cook until they're soft and just starting to brown, about 5 minutes.

Add chillies, garlic, ginger and turmeric powder. Cook for a couple of minutes.

Add diced tomatoes and cook on low until they break down and become paste-like in texture, about 10-15 minutes.

Add the pork and salt to taste. Add 1 cup water and pressure cook for about 3-4 whistles. If it's spicy and seasoned to your taste, take off the flame. Garnish with coriander leaves and serve hot with steamed white rice.
