  1. 1 tbspOlive oil
  2. 3Carrots finely chopped (1 cup)
  3. 2Onions finely chopped (3 cups)
  4. 6 cloveGarlic minced
  5. 2 lbGround beef
  6. 1/4 cupTomato paste
  7. to tastesalt
  8. to tastepepper
  9. 1 cupDry white wine
  10. 1 canor bottle crushed tomatoes (28 ounces)
  11. 1 cupMilk

  1. 1

    In a heavy pot heat oil over high heat

  2. 2

    Add onions, carrots, and garlic cook stirring until slightly softened about 2 minutes

  3. 3

    Add ground beef; cook, breaking up the meat with a spoon until no longer pink about 5 minutes

  4. 4

    Stir in tomato paste; cook one minute

  5. 5

    Season generously with salt and pepper

  6. 6

    Add wine and tomatoes

  7. 7

    Bring sauce to a simmer cook partially covered stirring occasionally until thickened about 1 hour

  8. 8

    Add milk simmer until completely absorbed about 15 minutes more

  9. 9

    Season again with salt and pepper
