Ingredients

  1. 2 largeflat mushrooms.
  2. 2 tbspOlive oil (plus a little extra)
  3. 2Chopped spring onions.
  4. 1/2Chopped red pepper.
  5. 1 smallcourgette - chopped.
  6. 4Pitted and sliced olives.
  7. 2 tbspPorridge oats.
  8. 1 tbspChopped fresh basil.
  9. 1 tbspSoy sauce.
  10. 1 tbspFresh lime juice.

    Preheat the oven to 180c/350f.

  2. 2

    Wipe the mushrooms clean with a damp cloth and remove the stalks. Then chop up the stalks.

  3. 3

    Fry the chopped stalks, spring onions, pepper, courgette, olives and oats until the oats turn gold.

  4. 4

    Stir in the basil, soy sauce and lime juice.

  5. 5

    Oil the mushroom caps (the non-stalk side) and place them onto a baking tray, stalk side up.

  6. 6

    Fill them with the fried mixture and bake for 15-20mins.

  7. 7

    Serve on a bed of mixed salad leaves.
