Ingredients

  1. 2 lbChicken
  2. 60 ozWhite beans
  3. 20 ozEnchilada sauce
  4. 8 ozBacon chopped
  5. 10 cloveGarlic minced
  6. 8 cupChicken stock
  7. 2 canCorn
  8. 1Onion chopped
  9. 1/2 bunchCilantro finely chopped
  10. 2 tspCumin
  11. 1 1/2 tspChili powder
  12. 1 1/2 tspOregano
  13. 1 as neededBacon grease
  14. 2Limes quartered
  15. 2Jalapeños seeded & diced
  16. 2Chile peppers seeded & diced
  17. 1Habanero seeded & diced
  18. 2 cupRice

Cooking Instructions

    Cook chicken first and cut up into small pieces.

  2. 2

    Fry up bacon and set it on a plate and chop it up.

  3. 3

    Put grease in pot with onion and garlic. Cook until the onions begin to brown.

  4. 4

    Dump in the rest of ingredients and bring to a boil. Once that happens turn heat down and let it simmer for 50 mins. Let sit to cool and let flavors combine for 5 mins.

    Serve with rice on the side (add what you want to soup).
