Ingredients

12 servings
  1. 2eggs
  2. 150 gramssugar
  3. 125curd cheese (try Eastern European shops or Polish section in Tesco) or Ricotta
  4. 75 mlkefir
  5. 60 gramsmelted butter (let it cool down)
  6. 175 gramsdiced rhubarb
  7. 100 gramsflour
  8. 2 teaspoonsbaking powder
  9. 60 gramscorn flour
  10. Tiny bit of vanilla extract (optional)

Steps

    Preheat the oven to 200C

  2. 2

    Whisk eggs and sugar

  3. 3

    Mix curd cheese, kefir and melted butter

  4. 4

    Mix the dry ingredients

  5. 5

    Fold together all ingredients. Batter should be lumpy, so don't overmix.

    Spoon the mixture into a lined muffin tin. Bake for 20-25 minutes until golden on top.
