Ingredients

  • 2 litreMilk, Full Cream
  • 1/2 CupRice
  • 1 CupSugar
  • 1 teaspoonElaichi powder
  • 4 tbspoon Thandai Powder
  • For Garnishing
  • 8 to 10Soaked and shredded almonds
  • 8 to 10Dried Rose Petals
  • 8 to 10 stringSaffron soaked in milk
  • For Thandai powder
  • (Dry roast and grind all the ingredients into fine powder)
  • 1/2 cupAlmond
  • 2 tbsspoon Cashew nut
  • 1 teaspoonFennel seeds
  • 1 tbsspoon Poppy seeds
  • 1 tbsspoon melon seeds
  • 1/2 tspspoon black pepper powder
  • 4 to 5Green cardamom

Steps

  1. 1

    To start with, Wash and soak rice for at least 1 hour.

  2. 2

    Drain the rice and blend it in coarse paste. In the meanwhile, boil the milk and let it boil on low flame.

  3. 3

    Add Phirni paste gradually and keep stirring so that paste doesn’t gets thick in bottom.

  4. 4

    Add Saffron strands to it and once the milk gets thick, add cardamom and sugar to it. Keep stirring.

  5. 5

    Add thandai powder to Phirni and keep stirring for another 5-10 minutes, until it attain the thandai’s full flavour.

  6. 6

    Let it cool and then refrigerate before serving.

  7. 7

    Garnish with shredded almonds and rose petals before serving.
