Cook down onions and garlic with bacon grease about 6 minutes.

Peel and dice potatoes. Add to the pan with grease and onions. I add just a splash of water, don't cover in water. Mix well with seasonings, cover and cook on medium for about 15 minutes. Stirring occasionally, if its sticking add a little water to the bottom not much. And serve
