(*Make sure the mousse is frozen and the temp. of the glaze is not more than 32C before glazing)

Steps

Bloom the gelatin in some ice water.

Boil the cream and water together in a saucepan.
- 3
Add in the sugar and cocoa powder. Continue to heat while stirring constantly with a whisk until all the sugar is fully dissolved.

Add in the bloomed gelatin and stir until the gelatin has melted.
- 5
Cool the mixture in a nice bath until the mixture is about 30-32C. Glaze is ready to use.
