Flatten the pork chops to about 1/8 in thick

In a large skillet melt 2 tablespoons butter over moderate heat. . Add the pork and cook for 1 1/2 minutes on each side. Remove from pan.

Add remaining butter and chopped shallots saute for 1 minute.

Add beef stock and increase heat to high, boil for 1 minute. Add wine thyme and sugar, simmer for 3 minutes

Spoon sauce over pork chops and serve.
