Had imitation crab meat with no recipes. Adapted several recipes--which all called for real crab meat--from the internet, improvising with scant leftovers and little else. Great for a budget. Proud of this recipe that came from some ingenuity, boredom, and random leftovers!

Combine bread crumbs, sour cream, Dijon mustard, egg, tarragon, and shredded cheddar in a large mixing bowl. Add more sour cream/mustard as needed at any point before molding into patties, if mixture is too dry.

Fold imitation crab meat into mixture.
- 3
Mold mixture into 3-4 inch patties about half an inch thick.

Coat both sides of patties with dry breadcrumbs or corn meal.

Heat olive oil in large pan over med-high to high heat, then place patties onto pan, careful not to overcrowd.

Cook patties for 4-5 minutes each side, until golden brown. Remove from heat and place onto paper towels to absorb excess oil.

Serve and enjoy.
