Apricot, Ginger and Chicken Casserole

Cook chicken in a frying pan oil at 180°c until no longer pink inside, then place in a casserole dish and add the dried apricots.

Sauté the onion, garlic, ginger and lemon zest for a few minutes then stir in the thyme, stock and flour.

Once the mixture has thickened,pour over the chicken and apricots and place in the oven for 20 minutes to bake.

Serve with pasta or rice.
