This is a Traditional ,Seasonal Sindhi Vegetable. Loved by the elders of the house.Last year and this year it was not available in the Bangalore Market.But one of my MIL s friend brought it from Chennai. It was already cut so could not take the pics.

Steps

Peel, wash and cut yam flowers in round shape.

Heat pressure cooker and saute the onions till transparent.

Add little water if it iz sticking.
- 4
Add tomatoes, curds, ginger, garlic and green chilli paste and all the dry masalas.

Mix ; cover and cook for 10mins.

Add yam flowers, saute for more 5mins.

Usually these yam flowers are to be fried.

Add required water and close the lid.

Pressure cook by giving 3 whistles.

Allow it to cool.

Open the lid and adjust the taste.

Transfer in a serving dish and garnish with coriander leaves.

Serve hot with khichadi and roti.

Tip✴
1) Peeling and cutting Yam (Suran)and Yam Flowers (Suran Ja Gula) we tend to get itchiness and rashes to avoid this apply oil in both your palms. - 15
2) If you are using fried yam flowers, their is no need to pressure cook.
