This is one of the first cakes Spanish mothers make with their young kids because it is so easy and minimum mess. And since no weighing ingredients is necessary, it is perfectly doable for all ages. Most recipes use lemon yoghurt - not sure why - but any flavour works well and it is fun to choose extra ingredients to complement the flavour you have chosen. I used red fruit flavour yesterday.

Ingredients

  1. 1pot yoghurt
  2. 2pots brown sugar
  3. 3pots flour
  4. 3eggs
  5. 1 tspbaking powder
  6. 1pot sunflower oil
  7. 1lemon (zest of)
  8. 1 handfuloats
  9. 1 handfulcranberries
  10. 1nutmeg - a little grated at the last minute

Steps

    Put on the oven at 180. Empty the yoghurt into a bowl, then the sugar and oil. Crack in the eggs and....:

    Mix together!! Add the flour and baking powder....

    And mix again! Add the lemon zest, cranberries

    Oats and nutmeg. Then put in the baking dish

    Put in the oven for 25 mins(ish) and when it is done (clean fork in and clean fork out to make sure) put on a tray to cool.
