I created this recipe one morning out of items I had in my pantry. We wanted something other than the ordinary pancakes, and this breakfast casserole was born. My family (which includes 4 under 5) loves it and can clean a whole pan in minutes!

I created this recipe one morning out of items I had in my pantry. We wanted something other than the ordinary pancakes, and this breakfast casserole was born. My family (which includes 4 under 5) loves it and can clean a whole pan in minutes!

Preheat oven to 350°

Drain and save syrup from pears in mixing bowl. Set aside.

Dice pears and put in separate mixing bowl. Add 1tbsp vanilla, 2 tbsp cinnamon, and brown sugar. Mix until all pears are coated. Pour into bottom of baking dish. Spread to edges of pan.

Add pancake mix to syrup in bowl. Add remaining 2 tbsp cinnamon and 1 tbsp vanilla. Mix batter until smooth. Pour over pears in baking dish. Spread to edges of pan.

Bake in oven for about 30 mins or until knife inserted in center comes out clean.

Let cool and cut into squares for servings
