Trim pork and chop into small bite size pieces

Dice pepper and onion until they are about half the size of the pork chunks

Pour a small amount of oil into a sauté pan and turn heat up to med-high

Once oil is hot: add pineapple chunks and juice, hot sauce, and soy sauce.

Toss in the garlic and pork and cook until the pork is almost fully cooked. Add onions and peppers.

As you let the veggies cook: follow the rice instruction on the box (i used minute rice. If you use a different brand omit the water and follow what your brand says to do for 3 cups)

Once the rice is cooked add it to the sautéed veggies and pork. Add more pineapple juice for flavor or to keep it moist afterwards. (I used about half a can of extra juice)

Season to taste
