Last-minute Christmas Mincemeat

Mincemeat is meant to be made about three months in advance, to give time for the flavour and texture to develop. I thought that maybe with a cooked version this might not be necessary so I adapted a Mary Berry mincemeat recipe, and it worked. I made it yesterday, and today made some successfully gorgeous mince pies. So even if it's Christmas Eve you can still have home made mince pies in time for Christmas Day!

Ingredients

  1. 400 gdried fruit, I used raisins and sultanas only but you could also add dried cranberries, cherries, mixed peel etc
  2. 1eating apple, peeled
  3. 100 gmarzipan, grated
  4. 50 gbutter
  5. 50 gchopped almonds or cashew nuts
  6. 75 gsoft muscovado sugar
  7. 1/2 tspground cinnamon
  8. 1 tspmixed spice
  9. finely grated rind and juice of 1 lemon
  10. 200 mlbrandy, rum or whiskey

Steps

    Mix the dried fruit together. Weigh the nuts and break them up gently with the end of a rolling pin or chop roughly with a knife.

    Grate the marzipan and the apple. Put in a pan together with the dried fruit, nuts and butter.

    Add the sugar and spices and grate in the lemon zest, then squeeze the lemon and add the juice to the pan. Cover and heat gently, stirring as the butter and marzipan melt so everything mixes together.

    Simmer gently for about 10 minutes, then leave to cool. When completely cool add and stir in the rum, whiskey or brandy.

    I left it to stand for a while longer as it looked too liquid, and in about an hour or two the rum had been absorbed into the fruit. I then transferred it to jars (two of them) left them to stand overnight, then used the mincemeat to make mince pies the next day, see separate recipe.

I enjoy cooking mostly because I like eating, but also because it's a great way to relax at the end of the day. I work in book publishing and especially enjoy creating cookbooks written by cooks who love cooking and sharing food rather than creating show stopping dishes that take days to put together. As Nigel Slater would say; 'we are, after all, simply making ourselves something to eat'. I live with my lovely daughter Isobel who rarely pays any kind of compliment but will occasionally admit something I've cooked was quite nice, and our dog Piper, who will eat anything.

I found it really easy to do and it didn't take too long either. I probably only put half of the whiskey in it, as it seemed strong enough. Great recipe. Thanks.
