Ingredients

  • 500 gmnew patato
  • 1onion preferably White
  • 150 mlextra virgin olive oil
  • 3 tspchopped flatleaf parsley
  • 6egg

Steps

  1. 1

    Scrap the potatoes or leave the skins on if you prefer. Cut them into slice. Chop the onion.

  2. 2

    Heat the oil in a large frying pan add the potatoes and onion and stew gently partially covered for 30min stirring occasionally until the potatoes and onions through a colander into a large bowl (set the strained oil aside)

  3. 3

    Beat the egg separately then stir into the potatoes with a pinch of salt.

  4. 4

    Lightly coat frying pan with olive oil add egg potatoes and onion and cooked over low heat flipping omelette once to cook other side.

  5. 5

    Cooking a creative process and this recipe lends itself to your creativity add spices herbs meats veggies and cheese to your taste this is just to the base to a Spanish.
