Ingredients

4 servings
  1. 1 tbspbutter, light
  2. 2medium shallots, minced
  3. 3garlic cloves, minced
  4. 2 tbspfresh parsley, chopped
  5. 1/2 tspsea salt
  6. 1/4 tsppepper
  7. 1 1/2 tbsptomato paste
  8. 1 ozvodka
  9. 1/8 tsptable salt (for cooking pasta)
  10. 6 ozuncooked penne pasta
  11. 1/4 cupheavy whipping cream
  12. 10fresh basil leaves, chiffonade

Steps

  1. 1

    Bring a medium pot of salted water to a boil. Cook pasta according to package directions; drain.

  2. 2

    Heat a large skillet over a medium-low heat. Add butter, shallots and garlic; saute until shallots start to caramelize, about 3 to 5 minutes.

  3. 3

    Add parsley, sea salt and pepper, stirring once or twice. Add tomato paste and mix to form a paste. Cook for about 5 minutes, moving paste around pan occasionally; add vodka. Scrap bottom of pan with a wooden spoon and cook for about 5 minutes more.

  4. 4

    Add cream to tomato sauce; reduce heat to low and simmer for about 3 minutes. Add pasta to sauce and mix to coat; top with basil and season to taste with salt and pepper.

All of the descriptions on my recipes include the new "Smartpoints" value on Weight Watchers for each serving. Some are duplicates from others that I found online, with modifications to reduce the number of points or remove/substitute ingredients my husband and/or I don't like.I'm still new to the kitchen and cooking for two (normally I make recipes for 4 and pack the leftovers for lunch the next day) and am looking to learn more. If you have any suggestions for any of my recipes regarding ingredients or cooking methods please send me a message!!
