Mushroom soup for the cold season

This soup will warm up your very soul during this cold season. It takes very little effort to prepare but the results are heavenly. You can make this soup and serve your loved ones and each one will ask you for the recipe. I served it to my husband and expectant cousin and they loved it. Even my one year old Sifa loved it. It is also a very good appetizer for kids. Enjoy.

This soup will warm up your very soul during this cold season. It takes very little effort to prepare but the results are heavenly. In a nonstick skillet melt one tablespoon of butter and add onions, ginger and garlic.

Cook for a few minutes. Don't let the onions ginger and garlic brown.

Add in the chopped mushrooms. Stir and let it simmer on low heat for five minutes

Add the parsley. Cover and let it simmer for 5 minutes

Add the water. Stir and cover. Let the mixture boil on medium heat for an hour.

After an hour, remove from heat and let it cool.

Once cooled, transfer all the mixture into a blender.

Blend till smooth. (Like a puree)

Transfer to the nonstick skillet and add the other tablespoon of melted butter, black pepper and some salt to taste. Cook over very low heat while stirring frequently.

Immediately add in all the milk. Stir well and make sure all the milk is incorporated. Leave it to simmer for ten minutes.

Add the coriander. Stir and turn off the heat.

Serve with some scones. Enjoy
