Canned Zesty Smoked trout filet

Ingredients

  1. 2 lbsfresh caught trout 12 to 14" pan size work great!
  2. Marinade
  3. 3/4 cupbrown sugar
  4. 1 tablespoonsfresh black pepper
  5. 1/2 cupsoy sauce
  6. 2 tablespoonslemon juice
  7. 1/2 teaspoongarlic powder
  8. I bottle favorite zesty French dressing
  9. 1/4 cuplight olive oil

Cooking Instructions

    Marinate cleaned whole trout overnight with the first list of ingredients overnight

  2. 2

    Smoke whole trout for 4 to 8 hours depending upon ambient temperature and or smoker temp. Smoke until trout are fully cooked and partially dried.

    Peel smoked trout filets gently from bones and skin, trying to keep filets whole. This is why smoking til a bit dried helps, kind of like jerky.

    Mix zesty French dressing and olive oil together and blend well.

  5. 5

    Using mason jars pack filets upright into jars and pour dressing and oil blend over filers until jar is full then seal with lid.

    You can follow proper canning methods to allow long term dry storage!

    Serve with favorite cracker and cheese! Delicious appetizer with flair!
