Ingredients

  1. 1/2 cupquinoa soaked and cooked
  2. 1/2 cupsweet corn boiled
  3. 1big tomato washed, deseeded and chopped finely
  4. 1small green capsicum washed and chopped finely
  5. 1cucumber washed and chopped finely
  6. 1carrot washed and chopped finely
  7. 1/4 cupred grapes washed and cut into halves
  8. 1lemon juice
  9. 1 tbspolive oil
  10. 1 tsppaprika powder
  11. 1 tspgarlic powder
  12. 1 tspblack pepper powder
  13. 1/2 tspdried mixed herbs
  14. 15almonds chopped
  15. 15peanuts roasted and salted
  16. 2 tbspmint leaves washed and chopped finely
  17. salt as per taste

  1. 1

    In a bowl add cooked quinoa. Add boiled sweet corn, carrot, cucumber, tomato, green capsicum. Mix well and add grapes, peanuts, almonds, mint leaves.

    Prepare dressing - In another small bowl add lemon juice, olive oil, salt, pepper, paprika, garlic powder, dried mixed herbs. Whisk them together. It will become thick and cloudy.

  3. 3

    When you want to serve the salad pour the dressing on the mixed ingredients. Mix them well. Quinoa veggie and corn salad is ready to serve. Serve immediately.
