Soak the raw pork pieces in lime juice and leave for about 20 minutes to marinate.

Wash then chop the fresh Coriander into fairly small chunks and set aside.

Put the Pork into a dry frying pan and start to cook slowly, add a sprinkle of the fresh Coriander on top. When you turn over the chops to brown the other side, add the rest of the herbs so both sides get coated.

Continue slowly cooking adding more lime juice to prevent burning, until pork is cooked through but still tender. Please add a photo if you try this!!
