Nasi Goreng Terasi (Nostalgia)

There's a saying that love comes from the eyes to the heart, but according to my in-laws, it comes from fried rice to the heart, hohoho... (personal experience). This is a true story, you know. Our boarding houses were close by; I was still in college in Samarinda, and my husband was working there (he wasn't my husband yet at the time 😀). As fellow boarders far from our parents and rarely eating regularly, we often gathered to cook and eat together with friends. I was the one asked to cook, and what I made was this shrimp paste fried rice, hihi... stop! Let's not continue the story to avoid getting mushy, haha... but now it's a happy ending (God willing). For those who are single and want to follow in our footsteps, go ahead and make this shrimp paste fried rice and send me your recook... #ehhh😄😉 Those who aren't single can also recook it, or I'll get complaints, hahaha...

Heat a pan, add 2 tablespoons of margarine, sauté the spice paste until fragrant, add the green onion and stir until wilted. Push the sautéed spices to the side of the pan, add a little cooking oil to the other side, add the eggs and scramble them. Add the cabbage and shredded chicken, mix well with the spices, add the rice, stir well, cook over high heat, season with salt, sweet soy sauce, and soy sauce, stir quickly until everything is well combined, taste and adjust seasoning if needed, then turn off the heat.

Transfer to a serving plate and serve immediately with a sprinkle of fried shallots if desired, and accompaniments like fried egg, cucumber pickles, and crispy crackers (I don't have any right now, haha..)
