So here's my easy breezy steps to making and enjoying this delicious treat...

Wash your cow tail and cut into desire chunks. I don't cut mine too big. Season with garlic and plenty of onions, salt 1 stock cube, some ginger and boil without water. Once the water from the cow dries up, you can add water to cover the meat and cook till the skin softens.

Once is the meat is soften, pour out some of the water from the top, to avoid the soup looking too dark add fresh water, add all the pepper soup spiced, grinded pepper and remaining stock cube and allow to boil for almost 20mins...taste for salt too...

Lastly add the fresh slices of scent leaves and simmer on low heat for 3-5mins and bingo, your delicious cowtail pepper soup is ready to enjoy.

Please note, I use fresh peppers with a bit of black pepper to get the soup looking this way. I always avoid dried peppers in my peppersoup, because it kinda of darkens the soup and fresh pepper grinded with fresh yellow pepper hived the soup more flavour and bring the colour alive...😊😅😀😁🤣
