Ingredients

35 min cooking
6 servings
  • 1.5 cupssemolina
  • 1/2 cupDessicated coconut
  • 1 cupsugar
  • 1 tablespoonsbaking powder
  • 1egg
  • 1/2 kgplain yoghurt
  • 2 tablespoonsmaida
  • 1/2 cupoil
  • 1 teaspoonvanilla extract optional
  • For sugar syrup
  • 2 cupsugar
  • 1.5 cupswater
  • 1 teaspoonlemon juice
  • 1 tablespoonsrose water
  • 1/2 cupsweetened coconut flakes or sweetened Dessicated coconut
  • 15-16blanched almonds or crushed pistachios to garnish optional

Steps

35 min cooking
  1. 1

    Preheat oven to 180 and grease baking dish

  2. 2

    Mix all dry ingredients in a bowl

  3. 3

    Add beaten egg, yoghurt, oil, vanilla extract to dry mixture. Mix well to ensure no lumps are present

  4. 4

    Pour the above mixture to baking dish

  5. 5

    Bake for 30-40 minutes until top is browned. It should not get burnt or blackened

  6. 6

    While it's baking, prepare sugar syrup

  7. 7

    Boil sugar, water, rose water, lemon juice in a saucepan. Boil until syrup is thick and coats behind the spoon

  8. 8

    Once Basbousa is baked, take it out from oven. Pour the sugar syrup immediately on top. Let it stand until syrup is completely absorbed by Basbousa

  9. 9

    Sprinkle coconut flakes/ Dessicated coconut on top of Basbousa evenly

  10. 10

    You can add crushed pistachios or almonds on top for additional garnishing

  11. 11

    Refrigerate for 6-7 hours or overnight

  12. 12

    Cut in diamond shapes and serve cold
