Ingredients

Serves 2 servings
  • 2chicken leg quarters
  • 2potatoes
  • 2 tablespoonsoil
  • 3.5 ounces (100 grams)Massaman curry paste
  • 3 tablespoonsfish sauce
  • 3 tablespoonssugar
  • 1 cupcoconut cream (about 240 ml)
  • 2 tablespoonstamarind paste
  • 2 cupscoconut milk (about 480 ml) (If using boxed coconut milk, mix 1 part coconut milk with 1 part water to make this)
  • 4cinnamon sticks
  • 6star anise pods
  • Roasted peanuts, to taste

Steps

  1. 1

    Heat oil in a pan. Add the Massaman curry paste and stir-fry until fragrant. Add the coconut cream and cook until the oil separates.

  2. 2

    Add the chicken and potatoes, and stir to combine. Pour in the coconut milk.

  3. 3

    Add all the seasonings and spices. Stir well and simmer until the chicken and potatoes are cooked through.
