Firstly slit the eggplant 2-3 sides and then shallow fry them.

Take a blender jar add tomato, onion, garlic, ginger, green chilli, cloves, blackpeppercorn, black cardamom, cinnamon stick, dry coconut blend till smooth paste..keep aside.

Take a pan or kadhai add 1/2 tbsp oil heat add mustard seeds fry for a second then add paste and stir well cook for 10-12 minutes.

Then add curd and tamarind paste mix well.

Add red chilli powder, turmeric powder, garam masala powder, coriander powder salt stir well.

Add 1/2 cup of water cook well.

Add fried eggplant mix well and cover kadhai for 5-6 minutes

Garnish with coriander leaves and serve.
