Moist chicken breasts filled with creamy cheese and mushrooms. These can be made ahead and cooked right before serving for a delicious dinner entree. I served it with Roasted Poblano Cream Sauce, which is in my profile and in search. Serve with bread, rice or potatos and a green salad for a complete meal.

Ingredients

  1. 4boneless skinless chicken breats
  2. 8thin slices of bacon
  3. 6button mushromns, rough chopped
  4. 1shallot, chopped
  5. 1 clovegarlic, minced
  6. w tablesoon butter
  7. 1/2 teaspooncajun spice blend plus more for sprinkling on chicken
  8. 1/4teaspoonn black pepper and salt to tastem plus more for sprinkling on chicken
  9. 3 tablespoonsgarlic and herb cream cheese
  10. 1 teaspoonhot sauce, such as franks red hot
  11. 1/4 cupshredded sharp cheddar cheese
  12. 1 tablespoongrated romano cheese
  13. FOR SERVING

    Heat butter in a small skillet and soften mushrooms, shallot and garlic

    Lay chicken breasts on work surface and make a slit and flatten just slightly

    Season each breast with cajun seasoning, romano cheese and pepper

    Off heat stir in garlic and herb cheese, cheddar cheese, salt, pepper, cajun seasoning and hot sauce into mushroom onion mixture. Cool to room temperature

    Fill the center of each chicken breast with some of the filling

    Fold over to enclose filling with chicken. Wrap 2 slices of bacon tightly around each chicken, secure with toothpicks

    Preheat oven to 400. Line a baking dish with foil

    Bake for 35 to 45 minutes depending on size of chicken

    Serve with poblano sauce

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.
