Steps

Clean and slit brinjal from middle but leave it whole & intact.Keep aside.

Now dry roast coconut, onions till light brown.

Now in grinder jar add onions, coconut,fresh coriander and grind.Add some water if necessary.make paste.

Now take a pan add little oil and add whole jeera.

Add ginger garlic paste and saute.Put ground masala also and stir fry.

Now put chopped tomatoes,salt, turmeric and keep stirring.

When tomatoes soften add chilli powder and some water.Make a nice thick saucy masala.

Add all the brinjals and mix in the above masala.2-3mins stir.Add garam masala powder also.

Leave thick gravy or as per your choice.

Eat with roti or rice.

Add half cup water and cover the lid.Put flame on low.

After sometime check the brinjals if done or not.
