Rinse the pork and slice it thinly. Marinate with garlic, soy sauce, sugar, and honey for about 1 hour.

Pick and wash the herbs and lettuce, slice thinly, and drain well.

Over medium heat, roast the peanuts until cooked.

Grill the marinated pork over charcoal or pan-sear it. Fry the egg rolls.

To make the dipping sauce: Mix 1 tablespoon fish sauce, 3 tablespoons water, 2 tablespoons sugar, 1 teaspoon minced garlic, and 1 teaspoon minced chili. Stir until the sugar dissolves.

Heat cooking oil until hot, add the chopped scallions, stir, and immediately remove from heat.

To serve, place noodles, herbs, pork, and egg rolls in a bowl. Drizzle with scallion oil and add fish sauce to taste.
