  2. 1 lbmedium (31-40 count) shrimp, peeled and deveined
  3. 1 lbsmoked beef sausage, sliced 1/2" thick
  4. 1medium onion, small dice
  5. 1green pepper, small dice
  6. 6 clovesgarlic, finely diced
  7. 2 cansfire roasted tomatoes, drained
  8. 3 stalkscelery, diced
  9. 2 tspdried oregano
  10. 1-2 tspcayenne pepper
  11. 2 tspdried parsley
  12. 1 tspsmokey paprika
  13. 1/2 tsptumeric
  14. Salt & pepper
  15. 1 qtchicken stock
  16. 3 cupsuncooked white rice
  17. 6 cupswater
  18. 4 tbsVegetable oil, divided

    Clean any excess fat from thighs, cut into bite size pieces. Put in bowl and season with salt and pepper. Set aside.
