
Tarragon Chicken Salad
This dish is suitable for lunch or supper. As with any chicken salad, you can start with a cooked rotisserie chicken to save time. When making chicken salad, always remove and discard the skin after cooking. The combination of fresh and dried tarragon is a bit unusual but you'll find it greatly enhances the flavour of the salad, and the sour cream keeps the mayonnaise from masking the delicate taste of the herb. If you don't have any fresh tarragon around, increase the dried amount by 1 tsp. Turkey can also be used for this recipe.

In a large bowl, combine the chicken, celery and fresh tarragon.

In a separate bowl, whisk together the sour cream, mayonnaise, dried tarragon and salt and pepper. Pour the dressing over the chicken mixture and toss to coat evenly.

Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow flavour to develop. Serve each portion on a bed of 2 large lettuce leaves.
