1 cupsugar
1 tbspbaking powder
1/2-1 cupgrated & dried coconut
1 tspsalt
1 cupcoconut milk
1/3 cupoil
2 tspcoconut flavour
2eggs

Sift flour & baking powder together, add sugar & salt, & mix thoroughly.

Add oil, coconut milk, egg & flavor, & mix till properly incorporated.

Add grated coconut & fold in with a spatula. Bake till a skewer inserted in the centre of the cake comes out clean, & the top of the cake springs back when touched.
