Preheat oven 190° and brush a baking tray with oil, make 3deep slashes on either side the fish,insert lemon slices in the slashed and place on the tray bake for 25 minutes

Heat 1tbsp oil in a wok over high heat,add garlic,ginger,and chilli stir fry 1-2 minutes,add sugar, fish sauce,lime cook about 6 minutes until syrupy and set aside

Serve the fish platter, drizzle over the sauce and dress with the Spring onion and mixed herbs
