Ingredients

4 servings
  • 2 packagefrozen spinach (unfrozen and drained)
  • 1/2 cupparmesan cheese, shredded
  • 3eggs
  • 1/2 cupsbreadcrumbs
  • 3/4 cupsmargarine or butter/vegetable oil
  • to tasteSalt, pepper, oregano
  • 1/2 tspGarlic (chopped)
  • 1dry onion (chopped fine)
  • 1 cupmushrooms (chopped)

  1. 1

    Place all the ingredients into a bowl

    Set oven 350 or 180 c . Line a baking dish with parchment paper, mix all the ingredient, get rid of unwanted juice of spinach by squeezing it. Make balls, if they are so soft, chill the balls before you cook.

    Place balls into dish cook until color turns to golden about 3o mins.

    Serve hot

I used to be a runner. One day middle of the run, I had my feet numb up to my knee. It was sciatica from a car accident years ago. Then because having problems with my Achilles, I started using a cane. Now I changed my diet completely... no more sugar or process foods. My recent recipes are vegetarian, I do not eat meat anymore! Also no sugar, flour and very low carbohydrate meals .This is my journey now. Good luck on yours! 😄✌️
