Spicy Pinto Beans and Bacon - CROCKPOT

Ingredients

  1. 2 cupsdry pinto beans
  2. Lots of water
  3. 1large yellow onion, chopped
  4. 8 stripsthick cut bacon, baked and chopped
  5. 1 TbspTastefully Simple brand Green Tea Peppercorn seasoning blend
  6. 2 TbspPinto Bean Seasoning (recipe below)

Cooking Instructions

    Lay dry beans on a towel in a single layer and inspect for odd beans and foreign objects (small rocks). Discard what you've culled out.

    Rinse the beans several times, drain and put into a bowl. Cover with 3 inches of water and soak for at least 8 hours or overnight.

    Drain the beans, rinse with more water (several times) until water runs clear.

  4. 4

    Put beans and all other ingredients into a crockpot with enough water to cover by 2 inches.

  5. 5

    Cook on high for 6 hours.

  6. 6

    Serve with cornbread muffins and sliced avocado.

    PINTO BEAN SEASONING (credit to Carl Oberlander)

    4 tsp salt
    2 TB cumin
    1 tsp sugar
    1 TB paprika
    1 TB chili powder
    1 TB onion powder
    1 TB garlic powder

    Store in an airtight container for up to six months.

As a mom of two teen boys (one of which does not eat onions, peas, beans, and most other cooked vegetables) and a wife to a man who is always hungry, getting an evening meal together can be a challenge - especially when working full time outside the home and trying to schedule around the activities of a busy family. A crockpot and a microwave are my most used appliances, and I'm a freezer cooking fan.

My mom made a dish like this years ago before she passed away but used ground sausage and added barbecue sauce. It was one of my husband's favorite meals. She never measured anything so never knew how to duplicate. Sounds very similar to your post here.
Have you ever made this with barbecue saucer anything similar?
