Ingredients

4 servings
  • 2 TEVOO or coconut oil
  • 2 clovesgarlic, minced
  • 1yellow onion, chopped
  • 1 lbBrussels sprouts, quartered
  • 4 ozportobello mushrooms, sliced
  • 1med. sweet potato, cubed
  • 1 tspsea salt
  • 12 ozprecooked ham, cubed
  • 4eggs
  • 1/4 cParmesan cheese, grated

Steps

  1. 1

    Preheat oven to 350°F.

  2. 2

    In large ovenproof skillet heat oil. Cook onion and garlic until translucent.

  3. 3

    Add Brussels sprouts, mushrooms, sweet potato and salt. Cook covered, stirring occasionally, until sprouts and mushrooms soften.

  4. 4

    Stir in ham. Use spoon to form four evenly spaced wells in mixture. Crack an egg in each well. Sprinkle cheese on top.

  5. 5

    Bake in oven 10-15 minutes, until egg white cooks.
