Sauté the onion, garlic, and tomato. Stir for a few minutes, then add the potatoes and continue cooking for about 2 more minutes before adding the machaca.

Add water, season, and bring to a boil.

Once it boils, add the roasted green chile and cilantro. Check the flavor, cover, and let it cook for about 5 more minutes. After this time, turn off the heat and let it sit for a little while before serving.

Enjoy with some delicious flour tortillas 😋 I like to add a few drops of lime.
