1.sift flour and baking powder and set aside.then line a cupcake pan with paper cups.mix the milk and juice plus the vanilla essence and set aside.

2.cream margarine or butter with the oil first until softened and smooth,then gradually add sugar and beat(occasionally stopping to scrape down sides of bowl with rubber spatula) until mixture is light colored and fluffy,about 5 minutes

Add first 1/3 of flour and half the milk mixture,fold using spatula until the flour is just dissolved.turn on your mixed on low and beat in half the beaten egg,until just incorporated.

Repeat the process with the flour,milk mixture and egg and beat till batter is smooth,about 1 minute total time..if batter too thick add 2 tbsp warm water or milk and stir with spoon,then fold in the zest gently using a metal spoon to avoid deflating the mixture.

Spoon mixture evenly into the cases,filling to about 3/4 way,and bake in a pre-heated oven at 350°F(180°c) for 15-18minutes or more(22mins max) depending on your oven..also adjust the temperature accordingly as per type of oven as some take longer to heat or heat up quickly..so may require longer or shorter baking time.. before putting in oven #you can choose to sprinkle some crushed nuts on top of some cakes,and some with finely chopped orange slices for that extra zesty taste

Bake cakes until well browned.test with toothpick at center of cakes for doneness..toothpick comes out clean with a few golden crumbs sticking on it..when baked take out of oven and let cool in tray for about 10 minutes..turn out onto a rack to cool completely,then store In airtight container in cupboard and enjoy with tea/coffee. *keeps for 5days and they test even better fromthe 3rd onday and are softer n the flavor has really sunk in.
