For chana: Drain boiled chana properly. Take a big bowl,add chana, onion, tomato, green chilli and coriander leaves. Mix well.

Add lemon juice, pudina chutney and mix well.

Transfer it to a serving bowl.

For kulcha: In A big bowl add Maida, salt,ajwain and oil.

Mix all of them very well till the mixture is crumbly like bread crumps.

Add soda water little by little and knead the dough.

Consistency of the dough should be normal.

Rub the dough with little oil.

Cover it and keep aside for 15 minutes.

Making kulcha: Heat pan on medium flame.

Take a medium size ball from the dough.

Roll it like a little thick puri.

Take water in a bowl.

Take kulcha on your hand and wet one side of the kulcha with water.

Place the wet side of the kulcha on the hot pan.

Brush little oil on the top of the kulcha and sprinkle the coriander leaves, kasuri methi and ajwain.

Cook on high flame for few minutes and then turn the pan upside down on high flame.

Let it cook till the light brown colour, crispy and light black spots appear on it.

Now serve the kulcha with chatpata chana.
