Chicken Tortilla Soup

Ingredients

  1. 4 cupsdiced chicken
  2. 1 cupuncooked rice (I use Uncle Ben's)
  3. 2 (48 oz)reduced sodium chicken broth
  4. 1 (4.5 oz)chopped green chilies
  5. 1 (14.5 oz)can stewed tomatoes
  6. (blended)
  7. 1 cupshredded carrots
  8. 1 (15 oz)corn drain juice
  9. 1/2 tspsalt
  10. 1/2 tsppepper
  11. 1/4 tspcelery salt
  12. 1/4 tspcumin
  13. 1/4 tspground coriander
  14. 1/4 tsppaprika
  15. 1diced sweet onion
  16. 1 bunchcilantro
  17. 4-5garlic cloves
  18. 1/4 stickbutter
  19. White cheese shredded
  20. StripsTexas Toast Tortilla
  21. 1avocado sliced
  22. to tastesalt, pepper, garlic powder

Cooking Instructions

    Boil 4 chicken breast, cool and dice or if in a hurry buy a rotisserie chicken and debone 4 cups.

    In a large soup pot on medium high, saute' the diced onions, and garlic in the butter.

    Add 4 cups of the chicken broth and 1 cup of uncooked rice. Bring to a boil, then simmer on low for 20 minutes.

    Add the diced chicken, green chilies, blended tomatoes, 6 cups of chicken brooth, diced cilantro. Add all seasonings. Simmer 10 to 20 minutes. Add extra chicken broth if needed.

    In a large soup cup place some of the tortilla strips, and cheese then add the soup with 1 to 2 slices of avocado. Enjoy!!
