Well fresh pineapple just got picked from my pineapple bushes I had leftover sweet lime chicken, chicken, so I used the two breast pieces here in this recipe. I had 8 of them but I ate one before toasting the flap.

Ingredients

8 servings
  1. 1 poundfried chicken breast
  2. 1 cupfresh / canned pineapple chunks
  3. 1 cupdiced fresh tomatoes, two medium
  4. 1 cupshredded sharp cheddar cheese
  5. 1 cupsour cream
  6. To tastekosher salt
  7. 6large flour tortillas for burritos
  8. 1small lime, optional

Cooking Instructions

    Slice the top off the pineapple plant this in the ground and you can grow you a pineapple bush from the top.

    Peel the pineapple and cut up what you want to use.

    Dice the tomatoes

  4. 4

    Chop the chicken

  5. 5

    Toast the tortillas and add sour cream in the center.

  6. 6

    Add the chicken, tomatoes, and Pineapple pieces.

    Add the lettuce. This where you would squeeze a bit of lime juice over the inside before folding it up. Now heat a skillet or pan. Fold the tortilla inwards towards the mixture in the middle of the tortilla.

    Now roll it up. Repeat till all are done.

    Add the burrito flap side down on the hot skillet. This will cause the flap not to unfold as easy. It will also give a bit of crunch.
