Our delicious traditional dish made with duck and rice is a source of pride, as it is one of the most recognized and requested dishes by visitors to our country, especially from northern Peru.

Marinate the duck pieces with salt, pepper, cumin, garlic, and a little dark beer. Brown the duck pieces well to seal them, then set aside and prepare a sauté with onion and garlic.

Add the yellow chili pepper paste, ají especial paste, ají marisol paste, salt, pepper, cumin, and cilantro. Let the mixture cook, then add the sealed duck pieces. Simmer for one hour, then remove the duck pieces.

Add the rice, chicha de jora, and dark beer. If more liquid is needed, add enough water to cover the rice. Add the green peas and diced carrots. Let the rice cook uncovered for about 15 minutes, until the grains are tender and separate. Once ready, your delicious Arroz con Pato a la Chiclayana is done.
