Japanese Candied Sweet Potato
”Satsumaimo” the Japanese Sweet Potato has lots of vitamin and fiber.
This sweet potato with lots of nutrients is also very delicious.

Cooking Instructions

Wash Satumaimo well, and cut into big bite sizes, then soak in water for 5 minutes to release excess starch.

Dry Satumaimo on Kitchen towel.
- 3
Heat oil for deep fry to 180℃ (350℉), then fry Satumaimo until it's golden brown.
- 4
Put sugar and water to a pan, and heat over medium low hea until it melts.
- 5
Turn the heat to low, and cook until it's slightly brown, then turn off the heat ※The sugar gets REALLY HOT! So, please be careful.

Add fried Satumaimo to 5, and coat each with melted sugar, then place each on parchment paper separately until the coating is cooled. And served!

I can eat half of these right up.Work quickly from Step 5! This is because the sugar could harden. Also, use coarse salt or good tasting salt. After the initial sweetness, the lingering salty taste is really delicious. If you don't have starch water, you can substitute it with 2 heaping tablespoons of sugar.
