Grate baby marrows and drain excess water using a mutton cloth or dish cloth. Add it to a bowl along with the rest of the vegetables, salt, pepper and nutmeg.

Add eggs, flour and mix

Heat oil in a pan and drop two spoonfuls of the mixture and shape into a patty. Fry them for 2 mins on each side and flip once. You can fry 3 patties at a time.

Serve them warm with sweet chilli sauce on the side.
