Fried Egg Tofu with Red Curry Sauce

Cut the egg tofu into pieces. Coat each piece in flour, then dip in beaten egg, and coat with panko breadcrumbs. Fry over medium heat until golden brown.

Heat a pan with a little oil. Sauté the red curry paste until fragrant. Add evaporated milk, then season with palm sugar, fish sauce, and seasoning powder. Add a little water and kaffir lime leaves for extra aroma.

When ready to serve, pour the sauce into a separate bowl. Drizzle the sauce over the tofu just before eating.
