Brown Rice Noodles with Braised Beef

I usually prepare breakfast at home for my child before school. This meal consists of brown rice noodles with beef, accompanied by brown rice milk and sweet potatoes. The beef broth is prepared the night before, so in the morning, I just need to cook the noodles and reheat the beef broth for a delicious, nutritious, and hygienic breakfast for my child.
Brown Rice Noodles with Braised Beef
I usually prepare breakfast at home for my child before school. This meal consists of brown rice noodles with beef, accompanied by brown rice milk and sweet potatoes. Cooking Instructions

Cut the beef into cubes and marinate with five-spice powder, 1 tablespoon seasoning granules, and 1 tablespoon salt.

Wash the green onions and cut them into sections. Sauté the white parts until fragrant, then add the chopped onion and stir-fry together. Continue by adding the peeled and crushed ginger and chopped lemongrass.

Finally, add the beef and ketchup (or tomato) and stir-fry until the beef is browned. Pour in 1 bowl of boiling water, simmer on low heat, and skim off any foam to keep the broth clear.

Once the beef is tender, you can add green onions and cilantro to make a soup. I usually set aside half to cook noodles for the family's breakfast the next day.

For breakfast, simply cook the brown rice noodles or briefly blanch the rice noodles in boiling water. Place the noodles in a bowl, add herbs like cilantro, purple basil, and green onions, and pour the thoroughly boiled beef broth over them.
